Stuart was disappointed in me because I forgot to mention one of the highlights of our trip to Waterton. On Thursday afternoon, after we had pitched the tent, we went up to the Prince of Wales Hotel to have afternoon tea. The hotel is almost 100 years old, perched on the hill with a lovely view down the lake. (It almost didn't open, due to the crazy winds I mentioned in the Waterton blog. There was a big blow when the framework was up, that blew it right off the foundation. It was apparently a big to-do with men and horses hooked up to haul it back into place!)
Tea is served in the central room with floor to ceiling windows looking over the lake. You get your choice of teas and the standard three tier tray of goodies. The scones were quite nice and the smoked salmon rolls were Stuart's favorite. The white chocolate coconut truffles were lovely. I was a bit disappointed because there were no cucumber sandwiches and the strawberry mousse for the scones was ok, but I missed my Devonshire cream. I think we drank about 3 pots of tea between us and it was really civilized.

So we finally went. My first word of advice is that you have to try this place, when you're in Calgary. My second word of advice is to go early! We got a table right away when we arrived at 9:30, but we had a bit of a wait for food. When we left at 10:30, there was a line-up to get in. They don't serve what North Americans think of as a "traditional" pancake, instead it's kind of like a crepe but with your toppings cooked in. Similar to a fritatta, if you know those, but batter instead of egg as the binding agent. Each pannenkoek is round and about 30cm in diameter. They have dozens of both savoury and sweet options to add and we found out that they will split them for you. Stuart and I shared one with bacon, leek, mushrooms and cheese and one with apples and cinnamon. Very, very yummy!
Thank god it's almost time for lunch - typing all this has made me hungry again...
